Smoky Prickly Paloma


60ml Pueblo Viejo Añejo 22ml Grapefruit Juice 30ml Club Soda 15ml Charred Prickly Pear Syrup 2 tbsp Mix of Smoky Salt and Sal de Gusano (worm salt) 1 Grapefruit Slice and 1 Prickly Pear Slice for Garnish

How to make Prickly Pear syrup: This is a slightly smoked syrup because half the fruit is grilled first then broiled in oven until soft. Blend the fruit with a bit of water then fine strain. The second step is to actually make the syrup with water and sugar. The Prickly Pear has a taste of watermelon and bubblegum, so a trick with Prickly Pear syrup is to add a touch of citrus acid to bring out the flavour as the final step. It is a wonderful, lightly smoked syrup with bright pink colour.
